Riccardo Sobrino, of Cascina delle Rose , runs a small estate in Barbaresco that produces elegant, perfumed and complex wines and has been in his family for more than 70 years. This 5 ha/12 acre vineyard is a family operation – he and his brother inherited the property from their parents, who are still involved in major decisions of the winery. Cascina delle Rose was started by Riccardo's mother, Giovanna Rizzolio, in 1992 on this ideal site – steep vineyards with calcareous soils on the Tre Stelle vineyard side and clay soils on the Rio Sordo side to yield two equally wonderful but very different Barbarescos. Since its inception, Giovanna insisted on biodiversity, organic viticulture, and making wines that represent the elegance and grace. Wine Cellar Specialists created double and triple deep wood racking almost everywhere in the room to house 3,200 bottles of wine in total, exceeding the client’s expectations! The wood wine racks were created in the traditional valadys style custom racking and given a rustic finish with no need for a varnish. The counter top is intended for wine tasting and displays unique bottles of wine. A centerpiece is designed for magnums. This custom wine room is not only functional but beautiful to look at too! The guys jump right in and start with tasting the 2016 Ripassa Valpolicella Superiore from Zenato . This classic wine is a blend of Corvina (85%) and Rondinella (10%) with the rest an indigenous grape, Oseleta. The dried grape component does shine through in this big red while balanced with incredible structure and a bit of unusually grippy tannins. Wait until you hear the food pairings. The bulk of the episode is filled with facts about Ripasso, Amarone, and the rest of the wines in the region. There are new rules in Valpolicella and VinoMike fills you in on the ones that matter.
