Tannins are compounds found in the skins, seeds, and stems of wine grapes. While they contribute to the wine's structure, texture, and aging potential, in their youth they can often impart a dry, puckering sensation in the mouth. In young wines, tannins can be more pronounced, leading to a grippy or astringent feeling. Over time, as the wine ages, these tannins can soften and integrate, resulting in a smoother, more balanced taste. Wines made in the commune of Barolo, in Piedmont, Italy from the Nebbiolo grape are famously tannic in their youth, often requiring 5-10 years before becoming approachable and showing the amazing fruit and elegance underneath. The patience is worth the wait.
