Det vi først og fremst får fra vin når vi tilsetter den i mat er fruktighet og syre. Alkohol reagerer også med andre elementer i retten, og disse egenskapene skiller vin fra andre væsker uten alkohol. For eksempel anbefales det ofte å koke ut stekepannen med vin i stedet for vann, juice eller kraft, da vin kan løse opp både fett- og vannløselige forbindelser. Mens for mye alkohol kan dominere retten, vil riktig mengde gir dypere og mer komplekse smaker som i en kjøttgryte eller dampede blåskjell. Vin kan også påvirke teksturen på maten, som i en ostefondue der vinsyren binder seg til kalsium og forhindrer at osten klumper seg. Polkokken gjester studioet og gir råd om hva slags vin, sterkvin, brennevin, øl, sider og sake man bør bruke. Og vi har testet om alkoholen forsvinner når vi koker den. Collecting Coins in the Pub
I am always fascinated by the social and political aspects of the pub, perhaps more so even that the beery ones. Pubs, beer halls, biergartens, are all inherently social and political spaces, because they are places where humans get together and talk about the things that are important to them, or at least on their minds. Sure, folks can prattle on about not talking about politics or religion in polite society, but the pub, beer hall, or biergarten are not necessarily polite spaces, and so it is no surprise when you dig into the role such places have played in history that you learn interesting things...such as this story from the "Kuryer Lwowski" - that's Lemberger Courier for the non Polish speakers amongst us... This week I cover Malbec, or Côt as it's known in its native home of Southwest France. This old red grape variety has long history in France and was once one of its most planted grapes. But due to pickiness in the vineyard and harshness in the bottle, Malbec fell out of favor in its native country. Despite being a big component in the Bordeaux blend, the grape remained in relative obscurity until it hit South America, particularly Argentina. Although it wasn't an overnight success, Malbec hung around Argentina for about 150 years and then got its moment in the sun (literally). Today 75% of the world's Malbec grows in Argentina.
