If you’re looking for proof of the “premiumization” trend in alcohol, Cognac offers a fine example. Between 2016 and 2021, dollar sales in the U.S. grew a staggering 64.4 percent, according to data from the Distilled Spirits Council, with the “super premium” price range leading the charge. All things told, sales topped out at close to $3.5 billion in 2021, the most recent year for which the organization has published data. Parmi elles, les Glorieuses de Bresse ont une place de choix avec un produit d’exception : les volailles de Bresse. Le principe de ce concours est simple : par lot de 1, 2, 3 ou 4 volailles, chaque éleveur doit présenter les plus beaux animaux. Poulets, poulardes, chapons et pintades sont jugés sur des critères pointus et purement esthétiques. En décembre dernier, j’ai eu le plaisir d’assister à Montrevel à l’un des quatre concours organisés. Soit celui qui attire les chefs les plus renommés depuis que la famille Mieral a fait venir un certain Paul Bocuse dans les années.
