This rum is designed as a product that evokes crude and crude eau-de-vie, craved by pirates and privateers who ravaged the Cuban coasts, the so-called Treasure Island, between the 16th and 18th centuries, which they treasured as a part of looted loot in the surroundings of the Caribbean Sea and the Gulf of Mexico. Needless to say, the eau-de-vie is not the same as before, aggressive and repulsive to the palate, but very aged and treated with care. The Isla del Tesoro rum contains a pure soul, delivered, refined, strong of spirit, but soft to gracefully caress our olfactory sensations and our taste buds.

It’s a fun dish you can eat with your hands, a sort of tapas style.” – Chef Oscar The spiciness, creaminess and salinity of these Huevos Diablos, or deviled eggs, pair well with the palate-cleansing bubbles and toasty brioche notes of Marqués de Cáceres Cava. Want to try the pairing for yourself? You can in just a few easy steps: - Hard boil 4 eggs. Slice them in half, and remove the yolks. - In a food processor, combine 4 cooked egg yolks with ¼ cup mayonnaise and 2 tbsp Aji Amarillo Paste and 1 tsp of kosher salt. - Whip until smooth, and add to a piping pastry bag. - Fill the empty egg whites with the mixture. - Top with Nori sheets.

The Wine Makers – Alex Mitchell, Must Machinery
This week we welcome Alex Mitchell from MUST Machining & Fabrication to the podcast. MUST grew out of two different Napa Valley winery supplier/fabrication institutions York Machine Works and Burgstahler Machine Works, which had 70 years of experience innovating, leading, and servicing the wine industry. Alex, a former York employee began working with him in 2006, with the intent to purchase the business when York retired. In 2010, Alex and his wife, Michelle, assumed ownership. The Mitchells also met Wayne Burgstahler and told him that when he was ready to retire they were interested in purchasing his company, which came to fruition in late January 2020. The Mitchells combined the two shops and created MUST. Alex grew up in Napa Valley with his family growing grapes and making wine.
