Now these caves have been operating as a tourist destination for over 200 years. Can you imagine being 5km in the side of a mountain, 240 meters underground with no electricity? Well thankfully they now have electricity and a train system that takes you deep inside. You can then walk around the absolutely spectacular caves system. You will see all sorts of formations, from 1000’s of tiny spaghetti like stalactites on the roof, to giant columns of pure white that just glow, plus a whole lot more. Recipe: - Cook 1 golden beet in salted water for 35 minutes. Dice into ½ inch cubes. - Cook quinoa, following instructions on the package. - For the dressing, whisk together vineyard, oil, herbs, salt & pepper. - Mix 3 cups cooked quinoa, diced golden beets, and 10 sliced gooseberries in a large bowl. Add the dressing.

Make Yourself Special, Not the Bottle!
In my most recent posting I proposed, given the Covid19 lockdown effect on our lives, that we be a bit more self-indulgent when enjoying the little things in life. Little things like wine . . . and food. In addition to uncorking that “special bottle” that’s been patiently waiting to be appreciated, I suggested that you upgrade your wine philosophy (and self-worth) to include higher quality wines. That is, make yourself special, not the bottle. And so, I’m offering below a few time-worn ideas and advisories that hopefully will enhance your level of wine appreciation. You may be aware of these, or occasionally even employ them, but either way, just consider them friendly reminders, or at worst, an encouragement to make your wine experience a bit more fulfilling. First, is the “thirty-minute rule.” For optimum enjoyment, pull whites from the fridge thirty minutes before serving.
