Describes the initial steps in making 1 gallon of guava wine. Ingredients: 3 pounds of guavas 3.5 cups sugar 1 black teabag 1/4 teaspoon bread yeast 1/4 teaspoon wine yeast Note: I am not a professional winemaker. I hold no responsibility if the results of your winemaking causes injury or ill health. This is as natural (where possible) winemaking channel. The wines made on this channel do not use sulfites. You may use them and\or yeast nutrients and or energizers if that is how you prefer to make your wine/mead. This channel uses pasteurization. During the first 3 days give your musk a good stir, and to break up the fruit cap that will form if you are not using straining bags. Rack into secondary after 5 - 7 days, and continue to rack every 4-6 weeks until clear. Degas, back sweeten, bottle let age for at least 12 months total. Christian has brought three different German wines, each from a different producer. The 2021 Pinot Blanc is the first wine tasted. Its name Weissburgunder is German for Pinot Blanc, literally it means ‘White Burgundian.’ You don’t see much Pinot Blanc here in California but there is some in Menocino County and even in Idaho which Dan says is excellent. Also, Germany is producing “an unbelievable array” of delicious wines from new and different varieties. Christian likes the German Pinot Blancs that have “the tri-fecta” of good acidity, fruit and minerality all together. The Wine Makers – Aaron Pott, Pott Wines
Aaron Pott is a true legend in wine country. Starting his career at newton Vineyards in Napa, he left the U.S. for a position as winemaker at Château Troplong-Mondot, a Premier Grand Cru Classé in Saint-Émilion, France. Aaron then moved to Château Troplong- Mondont after a year to become director at Château La Tour Figeac, a Grand Cru Classé located in Saint-Emilion. He spent five years there and, in the process, earned a degree in Viticulture from the Université de Bourgogne in Dijon, France. Aaron eventually returned to Napa and accepted the position of head winemaker in charge of international brands for Beringer before taking over as general manager and winemaker at Quintessa in 2004. After buying a piece of property on Mt. Veeder, Aaron and his wife Claire started Pott Wines, making Zinfandel, Syrah, Cabernet Franc and Grenache. He continues to consult for numerous wineries, when he’s not surfing or watching soccer. All the wines are stellar, but that Zinfandel and Cabernet Franc
