From among the extraordinary quality vineyards that abound in the Toro DO, Matsu’s Technical Director, Raúl Acha, selects authentic centuries-old jewels with which it is possible to obtain an exceptional grape. These vineyards are between 80 and 100 years old with very low yields per vine, cultivated according to the tradition of not interfering with the logical processes dictated by nature. This ancient philosophy, together with privileged climatic conditions, make it possible for the viticulture taking place here to be practically artisanal. As a result, each year they obtain exceptional Tinta de Toro, a Tempranillo grape type that contributes an enormous personality to the wine. Matsu elaborate four wines that are a true reflection of the unique Toro land and climate and the people who work there. Georgia Is Famous for Orange Wine. It Can Do So Much More.
A growing contingent of Georgia wine industry insiders are waging an informal influence campaign to elevate the country’s vast array of wines. It’s a battle of perception: Although the number of Georgian wines exported to the United States hovers just under a million bottles—an increase of more than 3.5 times over between 2012 and 2022—Georgian wine largely remains a specialty offering. That’s because it’s closely associated with amber wine, also called orange wine. This white wine is aged on skins, which lends it a signature orange hue. Georgia has become known for producing these amber wines in qvevri, or large clay pots, which are generally buried underground and fall into the natural wine category. Wine importer Don Chigazola is back on California Wine Country with Steve Jaxon and Dan Berger, with newly arrived wines from Alto Adige. His company Chigazola Merchants brings small lots of carefully selected wines from small family producers in many different regions of Italy. Steve Jaxon describes what he does as “…the coolest job in the world.” Melissa Galliani is also with us in the studio today. Don begins by describing how he has recently expanded his activity into France, by applying the same model that they do to their business with Italian winemakers. They went to the Paris wine show, and they also spent some time visiting family winemakers in Provence. They met with four and they will definitely be importing from two of them. That will begin once the tariff situation settles down. I was asked to taste a wine and give an opinion of its quality. It was very good. A St. Emilion from a Chateau I did not know. The wine had never been in the US, and the wholesale company was new to the idea of even carrying a St. Emilion. My curiosity required me to ask the wholesaler, "Maybe the Chateau owner will come on the show?" "Let me check." "He would love it" So then I though I'd best look up the guest (this was one hour before his arrival). OMG..this Zaya Younan is a formidable businessman with over 1200 patents, 5 hotels, three golf courses, a fine cigar company, and now 2 Chateaux in France. I was humbled; for him taking the time to drive to my studio to be on the podcast, shows serious humility....but maybe I shouldn't be so surprised. This is often a trait of successful people: Do what it takes. Vous croyez connaître le kir, mais êtes-vous bien certains que ce qu’on vous sert dans votre verre en est vraiment un ? Dans la majorité des cas… ce n’est pas le cas. Pourquoi ? Parce que non, un kir, ce n’est pas juste «du vin blanc avec de la crème de cassis». Ça, c’est un blanc-cassis. Et c’est pas tout à fait la même histoire. Le kir, le vrai, est une affaire 100% bourguignonne. Il porte le nom du chanoine Kir, résistant, député, maire de Dijon et grand promoteur du patrimoine local. Dans les années 1950, le chanoine a un objectif : mettre en valeur le bourgogne aligoté, ce vin blanc un peu rustique, pas toujours très sexy, mais bien de chez lui. Et là, plutôt que de chanoiner en rond, il trouve une idée brillante : le marier à une crème de cassis produite localement. Le résultat plaît, et devient rapidement l’apéritif officiel de la mairie de Dijon. Succès immédiat.
