Ægir Bryggeri Rallar Amber Ale
I love to try new things. I am currently sailing around Iceland, and on board, I had Ægir Bryggeri Rallar Amber Ale from Norway. This Amber Ale is 4.7% ABV from Flåm, Vestland, Norway. They use six different types of malts in this brew. But I couldn’t find what the six malts are. This amber … Continue reading Ægir Bryggeri Rallar Amber Ale

The evolution of low and no-alcohol beer
The rise of low and no-alcohol beer has been one of the most significant shifts in modern brewing. As more consumers moderate their drinking, brewers are proving that flavour, style and technical quality do not need to depend on alcohol. Few understand that challenge better than Nirvana Brewery, one of the UK’s early pioneers in dedicated alcohol-free brewing. Drawing on insights from a recent WSET webinar with Head Brewer James Rabagliati, this article explores how brewers have helped transform the category. Brewing beer, not substitutes Alcohol-free beer has not always been brewed with style diversity in mind. For many years, the category focused primarily on creating alternatives to existing beers rather than building distinctive products in their own right. When Nirvana Brewery was founded in 2016, alcohol-free beer was still often treated as a compromise. Choice was limited, styles were few and many products felt more like alternatives rather than beers people genuinely sought out

Irish Stout Hot Wings Recipe
Irish Stout Hot Wings One of the things I like best in the world is good Buffalo hot sauce. Something with serious kick, but also well-rounded flavor – not simply burn for the sake of burning. Last year, I experienced some of the best Buffalo wings of my life (and vegetarian ones at that!) and since then, I've made it my mission to perfect a blend of elements, and create my ideal wing sauce. After months of experimentation, I finally nailed it. One of the key elements that was eluding me until now was using a bit of stout to round out the flavor, and add the depth and richness to offset the pure heat of the pepper. Irish Stout Hot Wings Recipe Ingredients Illustration by Em Sauter 10 oz. red pepper hot sauce (2 small bottles. My preferred brand is Scoville Food Institute.) 6 oz. or 1/2 bottle Irish stout 1 tbsp dried minced onion 1 tbsp garlic powder 1/2 cup honey 1/2 cup brown sugar 1 1/2 tsp black pepper 1/2 tsp white pepper 1 tsp smoked paprika 2 tbsp c

At Home with Albert Bichot Nuits-Saint-Georges 2018 – A Classic Red Burgundy

He had picked it up from the duty-free shop before boarding his flight. Like many special bottles, it found a place in our home bar, patiently waiting for the right occasion.
