Structure: The Anatomy of Wine

I often take wine to restaurants, and if its quality warrants it, I like to share it with one or more of the employees. Recently my wife and I went to our favorite Italian restaurant, and being in the mood for something special, I took a 1997 Flaccianello , an exceptional Italian wine that ranks high in that unofficial classification of “Super Tuscans.” Our food server gave the wine an ecstatic two thumbs up, but I was curious how the Chef—born and trained in Italy—might react to it. Smiling broadly and carefully examining the bottle between swirls and sips, he was also quite taken by it. Among his several positive assessments, and the one on which we both agreed, was the wine’s excellent structure —a special quality that made it vibrant and delicious even after all these years. The koffieklip/granite soils near Malmesbury giving bush vines planted in 1981. Bush vines on the foothills of the Piketberg mountains in Moutons Hoek planted in 1961 on deep sandstone soils. The second vineyard planted in 1998 is close to Redelinghuys and 18km from the cold Atlantic ocean on the West Coast. The vineyard is also dry land farmed and gives a specific saltiness to the grapes. All organically and dry land farmed. The fruit was hand harvested and whole bunch pressed. The wine is a blend of three vineyards which were co fermented in a 5000L concrete tank for 6 months then racked off its gross lees and placed back into the concrete tank. No yeast (or other) inoculation or additives apart from a small amount of SO2 shortly before bottling were added ====

Pollak Vineyards is a small family-owned winery founded in 2003 when Margo and David Pollak bought a farm west of Charlottesville, Virginia. David's experience in wine was pretty extensive – he worked in the 1970s in Sonoma's Russian River Valley and was a founding partner and investor in one of Napa Valley's first Carneros wineries, Bouchaine Vineyards. Dean Underwood: Oral History Interview
This interview is with Dean Underwood of Barakel Vineyards. In this interview, Dean talks about spending his life as a farmer and his decision to grow wine grapes. He speaks about growing up in Albany and working on his family's farm, focusing on row crops at first. Later he discusses his burgeoning interest in wine and wine grapes, working with his neighbors at Olsen Family Vineyards and going through the wine program at Chemeketa Community College. He then talks about his own Barakel Vineyard, and about deciding what to plant, how to farm, and where to sell the grapes. He also discusses the growth he's seen in the Oregon wine industry and his plans for the future. This interview was conducted by Rich Schmidt at Linfield University’s Nicholson Library on March 5, 2026.

Jon Tomaselli: Oral History Interview
This interview is with Jon Tomaselli of Torii Mor Winery. In this interview, Jon talks about his family’s legacy of winemaking and how he has carried that on in the Willamette Valley. Jon talks about growing up in an Italian family with a long history of winemaking. Living in Ohio, his dad and grandpa would purchase grapes from California to make wine at home. Jon first carried on that tradition while living in Arizona. Jon discusses moving to Oregon in 2006 when a job opportunity came up for his wife. After visiting earlier that year to purchase a house and go wine tasting, Jon was once again enraptured by the idea of making wine. The second tasting that trip was at Torii Mor Winery, where Jon introduced himself and asked for a job. Later in the interview, Jon talks about learning commercial winemaking under Jacques Tardy, Torii Mor’s head winemaker.
