This edition is 87% Merlot with 10% Cabernet Franc and 3% Cabernet Sauvignon. David scores the wine 95-96/100 and feels he may be being conservative. Château La Conseillante is an acclaimed wine estate in the Pomerol district of Bordeaux, known for its Merlot-based grand vin. The vineyard is situated in the east of the appellation on the border with Saint-Émilion and adjoining properties include Château L'Évangile and Vieux Château Certan in Pomerol, and Cheval Blanc in Saint-Émilion to the southeast. Said to have been created at the Schuylkill Fishing Company of Philadelphia, America’s oldest fishing club, in 1732, Fish House Punch was sampled by George Washington during a victory celebration at New York’s Fraunces Tavern. Now you, too, can enjoy this bold, rum-based drink! Philadelphia Fish House Punch (Serves 12) • 1 ½ c rum • ¾ c cognac • ¾ c peach brandy • 1 c lemon simple syrup* • 1 c fresh lemon juice • 4 c cold water • Decorated ice ring** • Freshly grated nutmeg, for garnish *Lemon simple syrup: Muddle lemon peels from 4 lemons and 1 cup sugar in a medium bowl; cover and let mixture stand for at least 3 hours. Add 1 cup boiling water to mixture and stir until sugar is dissolved; let cool.
