di Carlo Macchi Ci possono essere vari modi per parlare di Sandro De Bruno e dei suoi vini: possiamo dire che è un bravissimo produttore di Soave oppure un difensore della quasi defunta Soave Colli Scaligeri DOC o ancora peggio (o meglio!!!) un accanito sostenitore di un’uva che non ha mai decollato, la durella. La durella è un’uva che si trova essenzialmente sui Monti Lessini, dietro Verona: ce ne sono meno di 500 ettari e la sua principale caratteristica è di essere tardiva (anche adesso Sandro la vendemmia dopo la metà di ottobre) e di avere pH bassissimi e acidità altissima. Un’uva per vini bianchi taglienti come l’acciaio o per spumanti metodo classico di assoluta e austera finezza. E proprio di questi voglio parlarvi, in particolare del suo Metodo Classico denominato 100, cioè che resta 100 mesi sui lieviti. Ma questa è solo una delle molte particolarità.
