What makes a well-made Mint Julep Cocktail much more complex than you expect? James Chatto reveals the secret
Introduction What makes a properly made mint julep much more complex than people expect? How did an Indian revolutionary leader end up creating one of Japan’s most famous curry recipes? How did a recipe collected during a 1930s concert tour in Indonesia become the legendary Queen Mother’s Cake, different from every other chocolate cake you’ve ever had? In this episode of the Unreserved Wine Talk podcast, I’m chatting with James Chatto, co-author of the terrific new book Acquired Tastes: The Lives and Recipes of Eight Culinary Ambassadors. You can find the wines we discussed here. Giveaway Three of you are […]

If the Chouffe hits
Obviously I don't do "guilty pleasure" beers, but I do have a fondness for Cherry Chouffe while also recognising it's no great feat of Belgian brewing artistry. So I was perhaps inappropriately delighted to find the fruited gnome series has a second addition: Chouffe Framboise . Raspberry, like cherry, is an established and acceptable Belgian beer fruit. When we start getting Chouffe Mango and Chouffe Banana, I'll worry that they've gone full Floris. This can't be exactly the same beer as Cherry Chouffe with only a different syrup, because it's 7% ABV rather than 8. Maybe that just means they've added more gunk. Anyone who sees the word "Framboise" and thinks immediately of acid tartness, may look elsewhere. This is heavy and dense, a clear claret-red colour in the glass, and is extremely sweet. For those who consider a cone of soft-serve ice cream incomplete without a streak of tachycardia-inducing pink sauce: this is your beer. I am, generally speaking, tolerant of fruity sweet flavo

Cuvaison
Here is the brilliant new lineup by Cuvaison. I have long admired the wines of Cuvaison. These were some of the wines that I bought for my personal collection more than twenty years ago. Steve Rogstad has been at the helm for more than two decades and has helped shape not only these wines but wines from this windswept region. Founded back in 1969, ten years later Cuvaison acquired 400 acres of highly prized land north of San Pablo Bay in the Los Carneros district of Napa Valley which is a site that is highly influenced by fog and cooler temperatures from the bay. The new Cuvaison are outstanding. Check out the 2024 Cuvaison ‘Kite Tail’ Chardonnay (OB, 94) which is a treat to savor now. Learn more about this outstanding producer at https://www.cuvaison.com and here are the killer sparkling wine, Chardonnay and Pinot Noir releases by Cuvaison. 2025 Cuvaison Rose- Made from Grenache grapes, this 2025 Rose offers a soft mouthfeel on the approach. Bushmills 21 Years ‘Three Wood’
This is a travel retail edition of the Bushmills 21 Year Old , which comes at a higher strength of 46% and adds an extra finish. The spirit ages in signature bourbon barrels and Oloroso sherry casks for around 18 years and then goes into first-fill Marsala wine barrels . The regular version is Madeira-finished , if I'm not mistaken. Bushmills 21 yo 'Three Wood' (46%, OB +/- 2023, Marsala finish, travel retail) Nose: rich, with a good dose of brown sugar, gently toasted oak and very light hints of wine. After a few moments it moves towards cherry jam. Then it becomes more tropical, showing pineapples, peaches and ripe mango. Hints of vanilla, marzipan and honey in the background. Subtle minty notes as well. Good start. Mouth: again there's an unmistakable winey note (clove, chocolate, leather) but also black cherry notes and blackberry jam. Red wine gums. Later also caramelized walnuts, with hints of black tea, as well as a return of the mango and honey. Toffee, hazelnuts and some

Baer
Erica Orr is the talented winemaker behind Baer wines. It is my pleasure to share one of the jewels of Woodinville. Winemaker Erica Orr took over this program more than a decade ago and began in 1998, working her first harvest with eminent winemaker Cathy Corison in the Napa Valley. She immediately caught the wine bug and enrolled in the enology master’s degree program at UC Davis where she completed her master’s degree in 2003. Erica also has a bachelor’s degree in biochemistry from UC Berkeley and three years of research experience as a biochemistry lab technician for 2009 Nobel Laureate Dr. Elizabeth Blackburn at UC San Francisco. She is a great person to chat wine with. The wines are really outstanding across the board. I love the 2024 Baer Rose (OB, 92) which is a stunning, beautifully-textured wine. I love the 2022 Baer ‘Ursa’ Red Wine (OB, 93) which is smooth and silky stuff from this slightly cooler vintage. Learn more about this great Woodinville winery at at baerwinery.c
