Where beer geeks fear to tread
Today it's another chapter in the ongoing history of Dublin's Smithfield Brewing Company, last seen in this post from 2024. Back then, a shiny new brewing kit had been installed at the old soap factory on North King Street but there was no sign of the brewery opening, nor indeed of any brewing happening -- I understand there is a well-established contract brewing link to JJ's in Limerick. I suspect that will be the case for a little while yet, as the soap factory has been earmarked for redevelopment into student flats, meaning the brewery will be on the move again. Smithfield Brewing is part of a company which owns a small chain of central Dublin pubs, clustered around fashionable Fade Street, which are the only venues in which the beer is served. Finding out what they're pouring these days meant going undercover as one of the cool kids, to Drury Buildings, where four unfamiliar Smithfield beers were on tap. As some of you may know Carlos is closing Arquiles down to move to England as a consultant and potentially make some wine. He’s lived there before, as well as Cuba where he grew up and the Soviet Union. Carlos along with a group of like minded producers have been showing the high quality, natural 0/0 wines can achieve in the northern foothills. He explains growing up in Cuba, his earliest wine memories and the ways he shepherds through clean and expressive natural wines. There might still be some bottles available through Carlos or your favorite natural wine shop but move fast. Winemaker Justin Ennis crafts Freestone wines with a deep attention to detail, capturing the distinct character of each vineyard while balancing the vibrancy of the terroir with a refined, elegant structure. Now, that deep-rooted vision comes to market, as Justin and the winery introduce these vineyard-driven wines to a broader audience for the first time. “Everything begins in the vineyard. Through hands-on farming and careful attention, we work to bring in fruit that’s expressive and healthy. In the cellar, I practice minimal intervention winemaking so that the site, the varietal, the clone, and the vintage can speak for themselves,” said Ennis. “The wine is already in the vineyard; my job is simply not to get in its way.” In the 1990s, Joseph Phelps and his son Bill set out to find a place in California’s wine country where they could produce superlative Pinot Noir and Chardonnay.
