Deep in the Valle Varaita — a wild, almost unknown valley less than an hour from Barbaresco — we spent a morning foraging with Paolo Servaj, a chef who walked away from the Michelin world to build something completely different. "Servaj" in Piedmontese means wild. And that's exactly what this experience is. We hiked through alpine meadows collecting wild herbs, lichens, and edible plants — Herba di Santa Barbara, Pseudevernia furfuracea, Salvia Pratensis — then watched Paolo transform everything we'd gathered into a stunning omakase lunch on the spot: ricotta gnocchi with wild spinach, butter, and foraged sage. No menu. No supermarket. Just the mountain, the season, and the knowledge to read both. This is Piedmont beyond Barolo and the Langhe. Big Peat – Leiden Edition 2026
Douglas Laing likes to play with their Big Peat series, one of the cornerstones of the Remarkable Regional Malts range. Limited editions are often nicely themed, with the typical character in a Christmas or Sinterklaas disguise. Many places around the world also have their localised edition: Mount Fuji, Tirol, Haemeldaeme... you name it.For Whisky in Leiden 2026 , which takes place next weekend in a church in Leiden, they came up with a tequila finished version. Big Peat - The Leiden Edition (60,9%, Douglas Laing 2026, tequila cask finish, 256 btl.) Nose: lots of mineral notes, seaweed, damp soil, along with roasted lemons and kippers. Nice mentholated / camphory notes. Also bonfire ash and a slightly sweeter hint of vanilla and unripe peach. Light herbal undertones as well. Really good. There's a very light green / vegetal note but I'm not getting much of the expected agave. Mouth: big and punchy. Quite raw, with a lot of white pepper and fiery medicinal peat coming out. Lemon j

Old Age
I seem to be caught in a plethora of medical appointments at the moment. Apart from the ongoing saga of my stomach and the recent dental work which requires follow-up, I had made an appointment with my usual dentist for an annual check-up in July. However, I have been experiencing palpitations during the night, so an ECG was called for and now a follow-up with the GP to discuss what they have found. I also have an upcoming appointment with my consultant gastroenterologist in a couple of weeks. It seems my diary is full of appointments. Getting old sucks. I've not been firing on all cylinders and have suspended my gym membership for the month of July to have a bit of a restful few weeks. I hope to be back to my normal self by August. I had to laugh the other day. I was doing a shift on the till at the foodbank charity shop and was chatting to the Assistant Manageress. She told me her cat is 16 and has dementia. She said it wanders round in the night miaowing, presumably beca
