Oggi abbiamo parlato di brasato, nel fattispecie di brasato al Barolo. Nella cucina italiana esistono tante ricette che prevedono una cottura a fuoco lento e una di queste è il brasato per l'appunto insieme a stracotto, stufato con i quali spesso ha diversi punti in comune. Il brasato come sua caratteristica prevede in primo luogo una marinatura che deve essere fatta col vino scelto per la preparazione, nel nostro caso il Barolo ma potrebbe essere anche un altro, insieme alle verdure classiche: sedano, carote,cipolla e un mazzetto aromatico. Dopo una marinatura di almeno 12 ore e dopo aver rosolato la carne in olio e burro inizierà la lenta cottura bagnando con il vino della marinata e all'occorrenza brodo. La cottura può essere fatta sia sul fornello per 2/3 ore oppure in forno a 150/160 per un tempo più prolungato. Buon appetito.
