C’est une émotion qui m’a conduit jusque sur les rives du Petit Morin, au sud de la Marne, à quelques kilomètres de Bergères-les-Vertus. La cuvée Les Sablonnières, de la maison Oudiette Filles. Ce 100% pinot noir des côteaux du Petit Morin m’a séduit par sa finesse, sa tension et en même temps sa chair propre au pinot. Un savant équilibre qui m’a immédiatement touché. Par un froid matin de janvier 2025, je suis donc allé à la rencontre de Margot Laurent, dans le village de Beaunay, pour découvrir les coulisses de la création d’un domaine en Champagne. J’y ai rencontré une jeune vigneronne déterminée et à l’avenir très prometteur. Gols is a small winemaking village located in the Neusiedlersee district of Austria’s Burgenland region, 60 km (37 miles) southeast of Vienna near the Hungarian border. Paul’s roots are established in two key areas: the Heideboden and the Parndorfer Platte. The 25 hectares (61.8 acres) of vines are divided into 40 plots, each with individual potential. This wide distribution gives the winery a variety of soils and microclimates – ideal for creating exciting, authentic wines year after year. In 2006, The Paul Achs winery received biodynamic certification for their meticulous care and thoughtfulness in tending to their vines and winemaking process. Today, Paul believes a vital soil supports the ripening process of the grapes in a very positive way. His belief is that mindfulness and respect for nature create and preserve values.

The Luck of the Irish cocktail blends smooth Irish whiskey with bright tangerine and a hint of maple sweetness. A frothy texture from egg white rounds it out, while mint and citrus garnishes add a refreshing, aromatic touch. Ingredients • 2 oz Writers’ Tears Copper Pot Irish Whiskey • 2 oz tangerine juice • ½ oz fresh lime juice • ½ oz maple syrup • 1 egg white • Tangerine slice, for garnish • Mint sprig, for garnish • Gold sanding sugar, for garnish Directions 1. Rim a coupe glass with gold sugar and chill. 2. Combine all ingredients, except for garnishes, in a shaker; shake vigorously. 3. Add ice and shake again. 4. Strain into prepared glass. 5. Garnish with tangerine slice and mint sprig.
