Toffee Nut Syrup
Yes, this is a Starbucks copycat Toffee Nut Syrup recipe. Once upon a time getting toffee nut latte was one of my weekly indulgences. I love toffee (think Heath bar!). It’s such a cozy flavor to me. And this homemade toffee nut simple syrup boasts all those flavors—buttery, caramel goodness. You can use this toffee…

Please The Palate October 2025 Newsletter
Summer is here and with it comes the 14th anniversary of Please The Palate. I am proud to be celebrating another year of business, especially amidst the challenges the wine industry is facing. And we are all feeling it. In the more than two decades that I have worked in the wine industry, I have seen challenges and changes, but nothing has been like this. It seems like the wine industry is being hit on every side, all at once. Costs are up, consumption is down. There is the threat of tariffs and an anti-alcohol sentiment. I have felt these challenges over the past two years but continue to try to push through with an optimistic attitude.

Dining Out in 2024: A milestone
A mostly fictional account of visiting a franchise restaurant It was a confluence of unfortunate circumstances and bad judgement that led me to taking a three year-old to a suburban mall the week after Christmas. There were things to return, a late gift to pick up, and we were catching an afternoon movie nearby. “It’ll … Continue reading Dining Out in 2024: A milestone →

Unironically Rocking Out to Smash Mouth
My name is Ben Johnson, and I enjoy late 1990s top forty pop rock. It’s something I didn’t ever see coming, but now that I’ve said it out loud, it feels inevitable and — honestly — something of a relief to admit. It’s one less thing to give a fuck about as I inch closer … Continue reading Unironically Rocking Out to Smash Mouth →

Recent meals
A fortnight of wonderful food (and wine) in Melbourne and along the Great Ocean Road. First up, a very old school Cantonese meal at Flower Drum . It's like a time capsule, suited middle aged waiters hover attentively, they remind me of long forgotten uncles. . . We open proceedings with a bowl of egg crusted deep fried fish skins and for a moment I feel like a child again, sitting in a noisy dai pai dong slurping fat rice noodles and fish cakes washed down with a tiny bottle of Kowloon dairy milk. Embla was a trip favourite. The room has a terrific vibe, and after the formality of Flower Drum it was a delight to have unobtrusive wait staff. The food was comforting and delicious. Every plate a winner - the guilty bites of pressed chicken skin crisps with whipped anchovy and chicory; the soft creamy fried polenta cubes; the succulent poussin with its amazing guanciale and sage flavoured sauce that demands a side order of the thickly sliced house bread to mop up the juices.
