THE STORY Avize, Cramant, Oger, Mesnil-sur-Oger, Chouilly. Most producers spend a career trying to capture one of the Côte des Blancs’ great Grand Cru villages convincingly; Adrien Bergère put all five in this bottle. His family has farmed the Vallée du Petit Morin since 1848 and now works 45 hectares, increasingly organically. The wine is partially fermented in barrel for texture, then bottled unfiltered and aged under cork by the traditional agrafe method—expensive, but it builds fantastic complexity. THE STORY Bassuet flies under the radar of most Champagne drinkers but has long been an open secret among people who know their Chardonnay. It sits in the Vitryat, beyond the celebrated Grand Cru villages, and the draw is underfoot: the same deep chalk that gives the region’s finest whites their spine and lift. Bernard Lonclas planted his first Chardonnay on a hillside parcel here in 1976 and bottled his debut Blanc de Blancs that same year—a real gamble when his neighbors were selling fruit to the big houses. His daughter Aurélie is now at his side. Bottled with barely a gram of sugar per liter, this is just Chardonnay, chalk, and a bright seam of acidity through the middle. THE STORY Most Champagne houses would rather you didn’t ask what’s in the bottle. EPC was built to do the opposite. Launched in 2019, this young house co-creates each cuvée hand in hand with independent growers, with a cellar master shaping the final blend—the growers get credit, and the drinker gets the whole story. The winemaking follows the same instinct: low dosage, limited sulfites, and as little intervention as the wine will allow. Even the label carries a temperature strip to signal when the bottle has reached its ideal chill. THE STORY Bouzy and Ambonnay, on the south-facing slopes of the Montagne de Reims, are among the best places on earth to grow Pinot Noir for sparkling wine. Both are rated Grand Cru, and Plein Care—“full frame”—is a single-varietal Blanc de Noirs drawn entirely from these two villages. The Tritant family has farmed here since 1930, working just 6.7 acres across 18 plots, certified organic since 2023. Much of the wine’s resonance comes from the estate’s perpetual reserve, an ever-evolving library of older wines that folds age and complexity into a nonvintage bottling. It finishes with a brut dosage of around 7 g/L, enough to buff the edges without tipping toward sweetness. THE STORY Dragonette Cellars began in a Los Angeles wine shop, where brothers John and Steve Dragonette worked alongside Brandon Sparks-Gillis. In 2005 the three of them moved north to the cold, windswept edge of Santa Barbara County to do one thing well: farm precise blocks in a small set of exceptional vineyards for very low yields, then stay out of the way in the cellar. Sparks-Gillis describes their farming as “almost like bonsai.” Fiddlestix is the first site they ever worked with, and it’s still one of the gems of their portfolio. Its clay-loam soils, threaded with chert and Monterey shale, meet the relentless cooling influence of the Pacific. THE STORY Taurasi is often called “the Barolo of the South,” made in the mountains inland and uphill from Naples. It is one of the coolest corners of the Italian south, where harvest can run into November, and was the first red wine in the south to earn DOCG status. Greek settlers brought vines here long before the Roman Republic, and the Aglianico grape takes its name from the word “Hellenic” because of those origins. Mastroberardino has been farming their land for ten generations, and refused to replace Aglianico with easier to grow varieties. Here, in Taurasi, Aglianico produces a wine that’s structured, savory, mineral, and built for long evolution—and the Radici Riserva is one of its very greatest examples. We’ve occasionally been accused of being obsessed with Cabernet—fine, sometimes we’re guilty as charged—but the list of the world’s great red grapes is long and varied. So for this shipment of the Connoisseurs Club, we wanted to explore truly great bottles beyond Cab. Our first wine is a signature bottling from one of California’s great producers of Pinot Noir, Dragonette Cellars. Vinous called them “one of the most consistent and impressive wineries in Santa Barbara,” and their Fiddlestix Vineyard Pinot is the original vineyard they ever worked with. Winemaker Brandon Sparks-Gillis described it to us as a “Goldilocks site” and the ‘23—born from one of California’s greatest-ever vintages—shows a combination of richness and finesse that captivates from first sip. THE STORY Fjord trout is rich and high in oil, and the instinct is to reach for a white with cutting acidity. Oriole reaches instead for a village Burgundy from Magnien’s Demeter-certified biodynamic parcels in Brochon, which does the same work. As the fat absorbs the wine’s acidity, the dish’s fennel, dill, and chive push forward and lend the wine a dimension it doesn’t show alone—while the toasted edge of the dehydrated trout skin draws out the subtle oak of its used-barrel élevage.
