Here are 3 key differences between Eastern and Western Georgia's winemaking: 1. Qvevri vs. Ch'uri In Eastern Georgia they're called qvevri. In the west, they're known as ch'uri and are often kept outside under a simple roof instead of inside the winery. Western Georgian amber wines also spend less time on the skins, creating wines that are lighter and less tannic. 2. Climate shapes the wine Eastern Georgia has a drier, more continental climate. Western Georgia is humid, subtropical, and influenced by the Black Sea, with rainfall throughout the year. Different climates = very different wines. 3. Different grapes, different styles Kakheti in the east is famous for Saperavi and Rkatsiteli.
