Behind the Cork™ - Karas Red Blend
2017 Karas Red Wine ($18) The 2017 Karas Red Wine is made by Karas Wines, located in the Armavir province of Armenia. The company grows its grapes in the Ararat Valley, a place where people have been making wine for over 6,200 years. The winery is named after "karas," which are traditional clay jars that locals used long ago to ferment their grapes. The vineyards are located high up in a dry area with very hot summers and freezing winters. The winemaking process blends traditional hand-picking with modern cellar technology. Workers pick all the grapes by hand. Inside the winery, the juice is fermented in stainless steel tanks. The final 2017 red wine is a blend made from several different grape varieties: 35% Syrah, 35% Malbec, 20% Cabernet Franc and 10% Tannat. After the wine finishes fermenting, it is poured into oak barrels where it ages for one year before being bottled. This wine is deep purple in color with aromas of black fruit. On the palate, this full-bodied wine has rich flav

Bedford Park is a Toronto-based independent bottler who we’ve used for our last two custom bottlings . We’ve long said we needed to do a tasting with them, and in April it finally happened. West coast, best coast. I love the Maritimes, don’t get me wrong, but BC hits differently, and Vancouver Island may be my favourite place in Canada. Why am I posting this now instead of … The post Shelter Point Distillery – Vancouver Island, BC appeared first on Toronto Whisky Society .

Scarcity, quality make Rare Perfection 10 year Bourbon a Worthy Find
Calling it "just another 10 year old bourbon" also is an understatement. This is a bold and beautiful cask strength pour that shows its maturity and complexity right from the opening. Most whiskies of this age need a little room to stretch out in the glass, but not this one.
videoComplete Guide to Cava DO: Grapes, Zones & Classifications
In this complete guide to Cava DO, I explore the history, grape varieties, production zones and modern quality classifications behind Spain’s traditional-method sparkling wine. Cava is far more geographically and stylistically diverse than many people realise We start with the origins of Cava in Penedès and the role of Josep Raventós and Manuel Raventós Domènech before looking at how the category developed into the modern Denominación de Origen Cava. I then break down the principal Cava grape varieties, including Macabeo, Xarel·lo and Parellada, alongside Chardonnay, Malvasía or Subirat Parent, Garnacha Tinta, Trepat, Pinot Noir and Monastrell. We look at how these varieties differ in ripening, altitude, flavour profile and their role within both white and rosado Cava. Geography is a major part of the story. We explore the Comtats de Barcelona and its subzones, including Serra de Mar, Valls d’Anoia-Foix, Conca del Gaià, Serra de Prades and Pla de Ponent. I also look at Cava producti
