Certain grape varieties, like Cabernet Sauvignon and Nebbiolo, naturally contain higher tannins, while Pinot Noir and Gamay have lower levels. Pinot Noir and Gamay, for example, are low in tannins—that’s because those grapes have thinner skins and fewer tannin-rich compounds—while Cabernet Sauvignon and Petit Verdot are high.
