Usher Tinkler Death By Semillon 2024
Forget everything you think you know about Semillon because this Death By Semillon from Usher Tinkler happily tears up the rule book. Funky, confident and packed with swagger, it's the sort of wine you should be asking for in the coolest bars from Fitzroy to Surry Hills and Brisbane's Fortitude Valley. Ginger beer, elderflower and yellow flowers jump from the glass, joined by a delightfully edgey, light cheese note that somehow just works. Green mango, dehydrated pineapple, lemon juice and lemon rind keep things vibrant, while sheets of green tea-like texture bring plenty of intrigue. Don't serve it too cold or you'll miss the layers that make this so compelling. Boundary pushing yet thoughtfully composed, this is an effortlessly trendy Semillon with serious personality. Ballandean Estate Semillon Sauvignon Blanc 2025
Spring long lunch in a glass, this fresh, vibrant and super crisp Semillon Sauvignon Blanc from the Granite Belt's Ballandean Estate is an excitement machine. A starburst of lemongrass, pineapple sage, green melon, passionfruit and lime juice explodes from the glass and flows neatly onto the palate. Add a fine sheet of texture to the mid-palate and a clean, crisp lemon sherbet acidity, and you have a very handy wine on your hands. Cael's Gate Semillon 2026
A new producer to me, in comes this Hunter Valley Semillon from Cael's Gate. Fresh green apple and lemongrass aromas spill from the glass offering a welcome invitation. The longer it sits, mind you, some bruised red apple aromas appear. A fine phenolic grip glues itself to the palate, with those aromas flowing onto it. Curiously, that bruised red apple trait builds momentum through the mouth and arrests attention. A half time image of my Coq au semillion. . . I keep returning to old recipes and making adjustments based on necessity (what’s in the fridge / pantry) and experience. In this case, semillion instead riesling; a teaspoon of sambal belacan for a homeopathic hint of heat; a handful of dried (and rehydrated) chanterelles in addition to a small bag of fresh button mushrooms; and much more homemade tomato paste for depth and warmth (a 400g tin of diced tomatoes, simmered with 4 cloves of garlic for 15 minutes before blending). I used the finished stew as a base for a rich chicken noodle soup. I’ve developed an obsession with Shanxi pulled noodles (the store bought ones by Havista, I have no inclination to make my own).
