Wendy Laureti, owner of Saddler's Creek Wines in the Hunter Valley, sits down with resident Chef Mattia "Chiero" Secchiero and new Cellar Door Manager Justin Bourke to walk you through the Bluegrass Wine and Food Pairing experience. Three brackets. Three dishes. Each bracket pairs a current release Bluegrass with its cellar-aged counterpart so you can taste the transformation side by side. From slow-cooked beef cheek with Shiraz, to chocolate pasta tortello with venison and tonka bean alongside the Cabernet Shiraz, to herb and garlic lamb saddle with truffle and the Cabernet Sauvignon, every dish is designed to bring out the best in both the new release and the aged wine.
