🎧The Wine Makers – Katy Wilson, VinePair NextWave Winemaker of the Year, Carbonic Maceration
On this week’s episode of The Wine Makers, we speak to Vine Pair’s Winemaker of the year Katy Wilson. Katy is a certified bad ass in the wine industry making wine for Anaba, Reeve, Bloodroot, and her own brand LaRue Wines. Katy grew up with agriculture in her blood, farming walnuts on her family’s farm. After double majoring in Wine & Viticulture and Agricultural Business at Cal Poly, San Luis Obispo, Katy got the winemaking bug traveling the world to make wines with some of the greats. Today we talk about all things carbonic maceration. Katy has been using carbonic maceration to make fresh delicious wines for her clients for years and advised our very own Danielle Langlois with her 2025 Gamay. Katy brought some really cool carbonically made Pinot, Grenache, and Sangiovese wines for us to try, some young, and spicy, and some fresh but subdued with a bit of age. Katy also brought some bottles from her personal label LaRue. We tasted a coastal, mouth watering, acid-driven 2021 Chardonnay

Albariño Across Rías Baixas Albariño is often introduced as a single Galician white wine: crisp, aromatic, coastal, and useful at the table. That description leaves out the local differences that shape the grape. Rías Baixas is divided into five subzones, and those subzones do not behave alike. Val do Salnés, O Rosal, Condado do Tea, ... The biggest mistake people make in groups like AA is focusing entirely on what not to do, constantly repeating "I shouldn't drink" or "I’ve got to quit alcohol". videoWhile most people get sleepy after a few drinks, 8% of the population has a gene variant
While most people get sleepy after a few drinks, 8% of the population has a gene variant that triggers a massive dopamine surge and energy spike instead. These are the people still buzzing at 3 AM while everyone else has crashed. But don’t be fooled, whether alcohol makes you sleepy or hyper, it’s still inhibiting your prefrontal cortex and stealing your cognitive edge. videoIf I tell you "do not think about a pink elephant," what’s the first thing that pops into your head?
If I tell you "do not think about a pink elephant," what’s the first thing that pops into your head? Exactly. When you walk around saying "I shouldn't drink" or "I need to quit," your brain stays hyper-focused on the very thing you're trying to avoid. You're reinforcing the habit by keeping it center stage. To break the cycle, you have to shift your language from what you’re avoiding to what you’re becoming. Instead of "I'm quitting," try "I prioritize my clarity" or "I easily choose water and high energy." Follow @jamesswanwick for the best alcohol-free content! #alcoholfree #quitdrinking #wine #alcohol

There's a moment in every barrel-aged batch where something clicks. The harsh, tannic edge softens. The fruit comes forward. A faint vanilla warmth settles into the background like it was always there. You didn't add vanilla. You didn't add anything — you just waited, and the wood did the work.
