di Roberto Giuliani Chi legge gli articoli firmati da uno qualsiasi dei Giovani Promettenti (IGP), saprà certamente che da parecchi anni a San Gimignano si svolge l’Anteprima della Vernaccia di San Gimignano, dal 2023 rinominata “Regina Ribelle”. Finché si è svolta all’interno delle Anteprime Toscane, durava un solo giorno, e questo rendeva impossibile programmare delle visite presso le aziende. Per fortuna la nuova versione si è staccata, è diventata autonoma e, invece che a febbraio, si svolge tre mesi dopo, utilissimi per ritrovare nel calice dei vini comprensibili e avere il tempo di approfondire il territorio con qualche visita mirata. Perché la Vernaccia di San Gimignano, a dispetto di ottuse convinzioni che vada bevuta subito in quanto vino bianco, ha invece una incredibile capacità di evolvere nel tempo e trasformarsi in molti casi in un grande vino. Hanno cominciato ad accorgersene i ristoratori del territorio, così qualcuno in carta propone un sempre maggior numero di vecchie
